Zoodle are noodles made of zucchini. This is a very original meal idea to make when you feel like changing things up a bit. If you make it for your family or friends, trust me they will be surprised, but in a good way. Let’s get cooking!
How to make Zoodles
For the zoodles:
- 2 medium zucchini
- 1 onion
- 2 to 3 garlic cloves
- 1 tbsp olive oil
- some salt
For the peanut sauce:
- 1 tbsp peanut butter
- 50 ml coconut milk
- pinch of salt
- Cut the garlic and onion into small cubes
- Slice very thinly the zucchini on its horizontal side (long side) to make large but thin lamellas, then cut these slices into 2 or 3 narrow slices, they should resemble to tagliatelle (check photos if not sure)
- Pour the olive oil into a big non sticky pan at medium heat. Add the garlic and onion. Let sit for 2 to 3 min with a lid on and stir 2 to 3 times
- Once the garlic and onion are slightly gold, add the zoodles and let sit for 3min with the lid on, on medium heat. Finish by 1 min without the lid. Stir from time to time
For the peanut sauce: Mix the peanut butter with the coconut milk and a pinch of salt in a small bowl
Serve your zoodles with some peanut sauce and enjoy!
You can switch the peanut sauce for any sauce you like. Peanut sauce is my go to as it is easy and very quick to make, I add it to so many of my meals!
